I think Chef McConnell would be intrigued by my pairing of the Clif Family RTE Blanc (Napa Valley Savignon Blanc) and my rendition of New Orleans Chef Michael Gulotta’s Nuocmam Caramel Wings.
I grill the wings over indirect heat for 30 minutes rather than frying them as Chef Gulotta's recipe calls for. However, everything else is shamelessly duped from Gulotta’s recipe. Sweet, crunchy, spicy, savory . . . these wings have it all and are the perfect companion for the RTE Blanc with its layers of tropical and stone fruit flavors.
